What is High Pressure Processing?

High Pressure Processing (HPP) is an advanced method used to separate seafood meat from the shell without applying heat.
By using high levels of pressure, the structure of the shell is gently loosened, allowing the meat to be removed cleanly while remaining raw.
This means the product keeps its natural texture, flavor and quality — without being cooked during the process.

How HPP Works

1. Sealed Chamber

The product is placed in a sealed chamber filled with water, creating a controlled environment for the pressure process.

2. High Pressure 

Extremely high pressure is applied evenly from all sides, loosening the bond between shell and meat without using heat.

3. Clean Separation

The meat detaches cleanly from the shell while remaining raw, allowing for easy handling and further processing.

4. Freezing

The extracted meat is quickly frozen to preserve freshness, texture and quality, ensuring optimal product stability for storage and distribution.
